Wine Review: This clear and medium gold colored Riesling Ice Wine from Boundary Breaks opens with an inviting and fragrant candied lemon and apricot bouquet with hints of orange marmalade, mango, and herbal tea. On the palate, this wine is full bodied with integrated plus acidity. The mouthfeel is smooth, viscous, and mouthwatering. The flavor profile is a dried apricot and honey blend with notes of fig and mango. We also detected hints of green tea, candied ginger, a touch of walnut. The finish is quite sweet, and its flavors and acidity drift away nicely. We would pair this Ice Wine with nothing. We would drink it on its own. However, if you would like to try it with dessert, we would pair it with a Dancing Deer molasses and clove cookie. Enjoy - KWGTP
Winemaker Notes: Ice Wine is a dessert wine made from grapes left out in the vineyard into the winter to dehydrate under the steady rays of the sun. We are able to pick the fruit for Ice Wine once temperature reach 15 degrees F or lower. At these low temperatures, any water left in the berries turns to ice. These dehydrated grapes/raisins give the Ice Wine juice an earthier, honey-flavored quality which is a distinctive characteristic of this wine.
