Wine Review: This opaque and midnight purple colored Cabernet Sauvignon from Paul Hobbs opens with a mild blackberry and wintermint bouquet with hints of black cherry, toasted coconut, and chocolate. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is beautifully balanced, super smooth, and supple. Its rich flavor profile features graphite and blackberry blend with notes of bay leaf and blueberry. We also detected hints of black cherry, cedar, black tea, and black pepper. The finish is dry, and its flavors, acidity, and well-managed moderate tannins drift away nicely. We would suggest decanting this wine in the near term, as it opens up a lot with aeration. We would pair this Cab with porterhouse steak. Enjoy - KWGTP
