Wine Review: This opaque and dark purple colored Cabernet Sauvignon from Alpha Omega opens with a blackberry and dark chocolate bouquet with hints of Dr. Pepper, iris, and black plum. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is balanced, smooth, polished, solid, and fresh. The flavor profile is an extracted black currant and graphite blend with notes of black licorice and dark chocolate. We also detected hints of oak, wild berries, and black tea. The finish is dry, and its flavors, acidity, and dusty big boy tannins build-up and stick around for a very long time. This wine could benefit from some more cellar time. If you can’t wait, we would suggest decanting this Cab for quite a long time in the near term. After that long decant we would pair it with a Snake River Farms wagyu ribeye. Enjoy - KWGTP
