Wine Review: This clear and straw-colored Riesling from Ravines opens with a lime zest and Vaseline bouquet with hints of asparagus. On the palate, this wine is medium bodied with plus acidity. The mouthfeel is round, bright, zesty, and mouthwatering. The flavor profile is a lime and saline blend with notes of herbal tea and quince. I also detected hints of chalky minerality, green olive, and green apple. The finish is dry, and its flavors and acidity are nicely extended. I would pair this Riesling with a scallop crudo.
