Wine Review: This is a big boy that needs some time and air! This very dark purple wine opens with a very fragrant spicy black current like bouquet. On the palate, this full bodied wine is round, has good acidity, and displays concentrated sweet black cherry like flavors with hints of menthol. The finish is very dry, has fine tannins, and shows a touch of acid on its very long finish. I decanted this wine and it really smoothes out on day 2. If you are getting this wine at a restaurant call ahead to have it decanted. You will be rewarded! This is a wine that would appeal to readers who like big concentrated Aussie wines. Finally, this wine was built for steak. Enjoy it with a nice Kobe. Enjoy - Ken

Winemaker Notes: Our 2002 vintage Elivette is a deeply hued blend of Cabernet Sauvignon, Merlot, and Cabernet Franc. The aromas are a heady complexion of raspberries, blackberry jam and dark chocolate with nuances of kola and dark spices. Over 22 months of aging in French oak has softened the tannins and shaped the wine into a lush and textural delight. Loaded with a concentration of jammy fruit and hints of black licorice, it is an opulent expression of our Bordeaux varieties as they come to full ripeness on the slopes of Spring Mountain. The full bodied and redolent nature of this wine begs to be enjoyed immediately, but its shape and structure describe a wine that won’t reach its peak for another 10 years.
