Wine Review: This pitch-black colored Cabernet Sauvignon opens with a black currant bouquet with hints of anise and violets. On the palate, this wine is medium plus bodied and pleasantly acidic. We also found it to be well-balanced, round and fresh. The flavor profile is a is a tasty mineral influenced black currant with notes of blackberry and black licorice. We also detected hints of ripe plum, oolong tea, and oak mixed in. The finish is dry and its fine tannins stick around for quite some time. The Panel would pair this Cab with a Porterhouse steak. Winemaker Notes: On the rim: deep, dark charcoal with touches of mahogany and lilac.
On the nose: complex nose with herbs, spices, fruit and fern with rose and potpourri, lingering on blueberry, strawberry, clay, chocolate, and redwood.
On the palate: velvety, elegant entrance evolving on a fresh and fruity mid-palate with raspberry and red cherry, lingering on peaches, mulberry and plum.
