Wine Review: This midnight purple colored Cabernet Sauvignon from Alpha Omega opens with a fragrant cassis and boysenberry bouquet with hints of graphite. On the palate, this wine is medium plus bodied with plus acidity. The mouthfeel is nicely balanced, round, juicy, and savory. The flavor profile is extracted blackberry and graphite blend with notes of black currant and oak. I also detected hints of black tea and tart black plum. The finish is dry and its bold and dusty tannins build-up and stick around for a very long time. This very young Cab should be decanted in the short term. Then I would pair it with a well-marbled ribeye. Enjoy – Ken
