Wine Review: This dark ruby colored Cabernet Sauvignon from Alpha Omega opens with a mild cassis and blackberry bouquet with hints of violets and pencil shavings. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, round, and fresh for a Cab. The flavor profile is graphite and cedar influenced black currant and black plum blend with notes of black cherry. We also detected hints of nutmeg and a dash of pepper. The finish is rather dry, and its managed moderate tannins stick around for a while. The Tasting Panel would decant this young Cab for a while as aeration opens this wine up. Then we would pair it with a prime rib. Enjoy – KWGTP
