Wine Review: This midnight purple colored Cabernet Sauvignon from Alpha Omega opens with an espresso and black cherry bouquet with hints of pencil shavings, blueberry, and malt. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is balanced, smooth, round, rich, and displays nice tension. The flavor profile is graphite influenced cassis and plum blend with notes of black tea and chalky minerality. We also detected hints of black licorice, blueberry, and black cherry. The finish is dry, and its flavors, acidity, and its bold and sticky tannins build-up and last for a very long time. We would decant this Cab for a while before we serve it with well-marble ribeye or with braised short ribs. Enjoy - KWGTP
