Wine Review: This opaque and deep burgundy colored Cabernet Sauvignon from Brassfield opens with a blackberry and pencil lead bouquet with hints of faint Australian black licorice and clove. On the palate, this wine is medium plus bodied with medium plus acidity. The mouthfeel is balanced, smooth, and savory. The flavor profile is a blackberry, black licorice, and black olive blend with notes of tobacco and black tea. We also detected hints of cassis, black pepper, oak, and stony minerality. The finish is dry, and its flavors, acidity, and very dusty and chewy tannins build-up and stick around for quite some time. We would decant this bold Cab for a bit before pairing it with a slow cooked fork tender pot roast or with braised short ribs. Enjoy - Ken & Karen
