Wine Review: This deep purple colored Cabernet Sauvignon from Carmen opens with a mild black cherry and leather bouquet with hints of mild dark chocolate, baking spice, and black olive. On the palate, this wine is medium bodied with integrated medium plus acidity. The mouthfeel is balanced, very smooth, and a little fresh. The flavor profile is a blackberry and cocoa blend with notes of stone dust and mulberry. We also detected hints of oak, cherry, licorice. The finish is dry, and its flavors, acidity, and moderate tannins linger and for a while. We would pair this versatile Cab with beef tips with mushroom gravy or with a beef brisket sandwich.
