Wine Review: Opaque, deep ruby in color, this Paso Robles Cabernet Sauvignon opens with an intense blackberry aroma that comes through on the palate. Red currant flavors provide a lift and add complexity to the medium body. The tannins are moderate and the oak and minerality are well-managed, resulting in a medium-length finish. This Cab paired nicely with a rigatoni Bolognese with shaved parmesan and whole-leaf basil. - Jeoff (SIP Certified)
Winemaker Notes: Our Cabernet Sauvignon is packed with rich berries, ripe plum, crushed cherry, and strawberry preserve aromas. Vanilla-chai nuances from both American and French oak frame the fruit. This broad-shouldered Cabernet Sauv is ready to drink now, but also has formidable aging capacity. Enjoy with any hearty entrée or with a selection of rich cheeses.
