Wine Review: This midnight purple colored Cabernet Sauvignon from Chappellet opens with a black currant and graphite bouquet with hints of black cherry and cigar wrapper. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is very nicely balanced, smooth, and bright. The flavor profile is delicious black cherry and juicy blackberry blend with notes of graphite and black tea. Hint of oak, clove, and black licorice. The finish is dry, and it polished medium tannins build-up and stick around for quite a while. The Tasting Panel would pair this Cab with Roy's prime rib roast. Enjoy – KWGTP
Winemaker Notes: Complex, concentrated and remarkably age-worthy, this wine offers dynamic Cabernet Sauvignon aromas of wild blackberry, black raspberry, clove, cedar and sage, with notes of briary spice, graphite and toasted oak. On the palate, fine-grained mountain tannins frame luxurious flavors of cassis, blackberry, wild herbs, roast coffee and white pepper, with fascinating notes volcanic minerality derived from the famed soils of Pritchard Hill emerging on the long, captivating finish.
