Wine Review: This hazy and deep purple colored Cabernet Franc from Chappellet is excellent! It opens with a sandalwood and red plum bouquet with hints of graphite and Chinese five spice. On the palate, this wine is medium bodied with integrated gentle acidity. The mouthfeel is very nicely balanced, silky smooth, and had nice tension. The flavor profile is complex blend of gentle Damson plum and tobacco with notes of oolong tea, acai berry, and baking spice. We also detected hints of currant, muddled mint, stone dust, and cedar. It was very layered. The finish is dry, and its flavors and refined tannins drift away nicely. We would pair this very refined and versatile Cab Franc with a veal chop or grilled bison.
