Wine Review: This midnight purple colored Cabernet Sauvignon from Chappellet opens with a mild cassis and blackberry bouquet with hints of violet, cedar, and anise. On the palate, this wine is full bodied with integrated medium acidity. The mouthfeel is nicely balanced, very smooth, and seamless. The flavor profile is a complex blend of very tasty cassis and blackberry with notes of vanilla, oak, and black licorice. We also detected hints of graphite, chocolate, cinnamon, and a touch of loam. The finish is dry, and its flavors, acidity and its polished dusty tannins build-up and stick around for quite some time. We would pair this impressive Cab with well-marbled ribeye. Enjoy – KWGTP
