Wine Review: This dark ruby colored Cabernet Sauvignon from Chappellet opens with a faint blueberry and black cherry bouquet with hints of dried fig, dried herbs, and eucalyptus. On the palate, this wine is medium plus bodied with integrated medium acidity. The mouthfeel is nicely balanced, smooth, and seamless. The flavor profile is cassis and graphite blend with notes of gentle black plum and oak. We also detected hints of black cherry and chocolate. The finish is dry, and its flavors, acidity, and polished moderate tannins are nicely sustained. We would pair this crowd-pleasing and versatile Cab with beef wellington. Enjoy - KWGTP
