Wine Review: This deep purple colored Merlot based wine opens with a black cherry and blackberry bouquet with hints of bay leaf and pencil shavings. On the palate, this wine is medium bodied with plus acidity. The mouthfeel is initially bright, and juicy. But does smooth out nicely with aeration. The flavor profile is blackberry and red currant blend with notes of stony minerality, black licorice and cedar. We also detected some hints of cinnamon and clove mixed in. The finish is dry and its flavors and dusty tannins drift away nicely. The Tasting Panel would decant this wine for 30 minutes before serving it with grilled wild boar tenderloin from Jiko at Disney’s Animal Kingdom lodge or with the Alpine Butcher’s marinated steak tips.
