Wine Review: We recently conducted a retrospective tasting of older very high-end Bordeaux offerings. This was our favorite of the five first growths that we tried. This unbelievable wine was slightly cloudy and dark ruby colored. It opens with a mild cedar, wild rose and currant bouquet with hints of leather. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is very nicely balanced, smooth, polished, and seamless. The flavor profile is a spicy plum and gentle cedar blend with notes of currant and anise. I also detected some hints of clove. The finish is dry, and its flavors, acidity, and its moderate refined tannins linger and last for a very long time. I would pair this extremely impressive Bordeaux with chateaubriand. Winemaker Notes: The 2005 vintage demonstrates the superiority of the Cabernet Sauvignon which alone brings body, power, fruit and structure. A wine of great complexity, we note at this stage the dominance of very ripe fruit and can fully perceive its enormous power, filled out with sleek, silky tannins.
