Wine Review: We recently conducted a retrospective tasting of older very high-end Bordeaux offerings. Everyone that tried this offering from Chateau Mouton Rothschild was very impressed. This slightly cloudy and dark garnet colored Cabernet Sauvignon based wine from Pauillac opens with an inviting cedar and gentle leather bouquet with hints of black cherry and cassis. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is balanced, round, smooth, and seamless. The flavor profile is black cherry and graphite blend with notes of oak and cassis. I also detected some hints of black pepper, plum, and dried herbs mixed in. The finish is quite dry, and its flavors, acidity, and dusty tannins build-up and stick around for quite some time. We would probably suggest leaving this one in the cellar for another 5 to 10 years. If you can't wait and must taste it in the near term. We would decant this wine for a very long time before serving it with a well-marbled ribeye steak. Enjoy - Ken (Tasted on 8/23/25)
Winemaker Notes: The wine is a dark and intense red with a blueish tint. With Cabernet Sauvignon predominant, it displays a complex range of aromas. From lightly toasted vanilla notes, the nose opens with airing to reveal fruit aromas, especially black currant, and black cherry. Powerful and well-integrated tannins reveal exceptional depth and roundness on the palate, ending on a fresh and mineral finish.
