Wine Review: This medium ruby colored Châteauneuf-du-Pape opens an elderberry, dried strawberry, and mild cinnamon bouquet with hints of red plum, wet stone, and cigar box. On the palate, this wine is medium bodied with nicely integrated medium plus acidity. The mouthfeel is polished, delicate, super smooth and very well-balanced. The flavor profile is a stewed red plum and dried herbs blend with notes of anise and clove gum. We also detected hints of dark chocolate, cedar, and blood orange. The finish is dry, and its well-managed fine tannins stick around for quite a while. The Tasting Panel would pair this very impressive CDP with a filet mignon with a red wine mushroom sauce.
