Wine Review: This simpler sparkler is a perfect substitute for the likes of unnamed bottom shelf California sparkling wines. The Cote Mas is made in the Traditional Methode which means second fermentation is in the bottle and no CO2 was added. This allows the wine to develop more toasted notes like apple crisp and creme brulee but without being sweet. The finish is soft but well developed with the acidity akin to a Granny Smith apple. Would pair well with shrimp risotto. – Nicolay

Winemaker Notes: An intense and refined nose of honey, acacia and crystallized lemon lead way to a harmonious palate of citrus fruits and balanced acidity. An excellent aperitif that pairs well with all styles of cuisine.
