Wine Review: This midnight purple colored Cabernet Sauvignon from Davis Estates opens with black currant and strawberry bouquet with hint of cigar box, menthol, and a touch of dark coffee. On the palate, this wine is medium plus bodied with medium plus acidity. The mouthfeel is balanced, structured, smooth, and dense. The flavor profile is concentrated stewed black plum and crushed stone minerality with notes of black tea and black currant. We also detected some hints of black licorice and oak. The finish is dry and its bold dusty tannins build-up and stick around for a very long time. The Tasting Panel would decant this big boy Cab for a very long time before serving it with cowboy ribeye.
