Wine Review: This pitch-black colored Cabernet Franc from Domaine du Petit Metris opens with a mild blackberry and black tea bouquet. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is balanced, round and very fresh. The flavor profile is a black licorice and black tea blend with notes of blackberry and stone dust. I also detected hints of black cherry and a touch of mint. The finish is dry, and its flavors, acidity, and very fine tannins drift away nicely. I would pair this Cabernet Franc with a crispy duck breast with caper-cherry sauce. Enjoy – Ken
Winemaker Notes: This superb Cab Franc is hand harvested, then destemmed and fermented in stainless steel using indigenous yeasts. A portion is then aged in oak on its lees before final blending and bottling. Rich in cherry and black currant, pomegranate with undertones of anisette. Berry flavors persist on the palate with notes of peppery spice. Balanced acidity and gentle tannins. Pair with pan-roasted duck breast, grilled rack of lamb, stroganoff, or ratatouille. A truly great example of Cabernet Franc from its Loire Valley homeland.
