Wine Review: This slightly opaque and dark garnet colored Cabernet Sauvignon opens with a gentle black currant bouquet with faint hints of rum cake and cured meat. On the palate, this wine is medium plus bodied, well-balanced, smooth and super refined. The flavor profile is a mild graphite influenced gentle black currant and black licorice blend with notes of oak and fig. We also detected hints of boysenberry and black tea mixed in. The finish is dry and its flavors and well-managed polished tannins drifted away nicely. This Cab is ready to go and would pair very nicely with a filet mignon or roast beef with Yorkshire pudding. Winemaker Notes: A full-bodied, complex Cabernet Sauvignon, built to last a lifetime. Ripe summer blackberries, sweet leathery tannins, black plums, dark Valrhona chocolate, vanilla bean, and notes of cinnamon. The layers of flavor impressions never stop. Dense and intense with a firm old-world acidity, this wine has a finish of Italian espresso. A classic Ehlers Estate '1886' that will continue to improve for decades.
