Wine Review: This pale white gold colored sparkling wine with pink hues from Emmolo opens with lots of medium streaming bubbles. The bouquet features moist bread dough, almond and a hint of lime. On the palate, this wine is light plus bodied with medium bright acidity. The flavor profile is ginger and walnut blend with notes minerality. We also detected hints of pie crust, chamomile tea, and green apple cider. The finish is dry, and its flavors and acidity have nice length. The Panel would pair this sparkler with pan-seared scallops, spanakopita, or with braised rabbit with mustard-tarragon sauce and bread dumplings. Enjoy – KWGTP
