Wine Review: This midnight purple colored Cabernet Sauvignon opens with a black currant, flint, and gentle oak bouquet with hints of black cherry and blueberry. On the palate, this wine is medium bodied with gentle mild acidity. It is balanced, round and very smooth. The flavor profile is a mild cassis and gentle graphite blend with notes of blueberry and cedar. We also detected hints of oolong tea, raspberry, and chocolate. The finish is dry, and its flavors and refined dusty tannins linger and last for a while. The Panel would pair this food friendly Cab with a filet mignon, a blackened tuna or with veal osso buco.
