Wine Review: This pale straw-colored sparkling wine from Gloria Ferrer has lots of streaming medium bubbles. It opens with a bread dough and baked green apple bouquet with notes of walnuts and a hint of apricot. On the palate, this wine is light bodied with medium plus acidity and is approachable. The flavor profile is a mineral influenced bread dough with notes of lemon zest and green apple. I also detected hints of ginger, almond and some toast that added to its complexity. The finish is dry, slightly creamy and refreshing. This Blanc de Blanc would pair well with grilled scallops or a crab dip with your favorite cracker. Enjoy – Ken
