Wine Review: This dark amber colored 30-Year-Old Sherry opens raisin and milk chocolate bouquet with hints of Kahlúa and toffee. On the palate, this wine is medium bodied with medium acidity. The mouthfeel is balanced, round and savory. The flavor profile is amaretto, raisin, and pecan blend with notes of black coffee and orange. We also picked up a hint of hazelnut. The finish is dry, and its flavors and acidity were nicely prolonged. The Tasting Panel would pair this wine with coffee cannoli, almond macaroons, amaretto cookies, or ginger-bread pudding. Winemaker Notes: Apostoles is dark amber in color. It is an interesting wine with an elegant and delicate nose similar to an Amontillado with notes of concentrated fruits. However, complex, and intense with notes of caramel and mature wood. This 30-year-old Sherry should be served slightly chilled in a small wine glass with foie gras or mature cheeses. Ideal with mature cheeses.
