Wine Review: This dark ruby colored Pinot Noir from Carneros is very good. It opens with a black raspberry and cola like bouquet. On the palate, this wine is medium bodied, balanced, lush and savory. The flavor profile is a ripe black raspberry jam with nicely integrated oak. I also detected hints of cola, red plum and strawberry. The finish is dry and its moderate tannins and fruit show nice length. This wine would pair well with Emeril's pan-seared salmon with sauteed baby spinach and a pink grapefruit Pinot Noir sauce. Winemaker Notes: Our Pinot Noir offers elegant aromas of violets, cherries and other red fruit layered with a hint of caramel. Fresh herbal notes give the nose added complexity. On the palate, strawberry and cranberry flavors meld with a subtle expression of creme brulee.
