Wine Review: This clear and white gold colored Pais Blanco from J. Bouchon in Chile opens with an Anjou pear and quince bouquet with hints of anise. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is balanced, round, slightly viscous, and lush. The flavor profile is a quince and Bosc pear blend with notes of chamomile tea. I also detected hints of honey and walnut. The finish is dry, and its flavors and acidity are nicely extended. I would pair this Pais Blanco with pan-fried trout almondine. Enjoy - Ken
Winemaker Notes: The rare white Pais. Harvested from the wild Pais trees that mutated to Blanco, then aged in an ancient tinaja (clay amphora) with native yeast with no filtration. Copper yellow in color with fruity aromas of green apple and pear with white pepper notes. In the mouth it is very juicy and fresh, with a long finish. This wine goes very well with different kinds of sausages, grilled fish, light sauced pasta, or a fresh summer salad.
