Wine Review: This hazy and medium purple colored Petit Verdot from Jefferson Vineyards opens with a pine saw dust and shitake mushroom bouquet with hints of violets and blue fruit. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is balanced, round, and fresh. The flavor profile is a black plum and sage blend with notes of coconut and cola. We also detected hints of mild black tea. The finish is dry, and its flavors, acidity, and medium dusty tannins fade away nicely. We would pair this Cab with Sheri’s sausage stuffed mushrooms.
