Wine Review: This midnight purple colored Cabernet Sauvignon from Knights Bridge opens with a mild black currant bouquet with hints of violets and oak. On the palate, this wine is medium plus bodied with integrated medium acidity. The mouthfeel is balanced and round. The flavor profile is a graphite and black currant blend with notes of black licorice. I also detected hints of blackberry and oak. The finish is rather dry, and its dusty tannins stick around for quite some time. I would decant this Cab for about 30 minute before pairing it with a well-marbled steak. Enjoy - Ken

Winemaker Notes: The aromas of this Knights Valley Cabernet Sauvignon begin with fragrant sweet red raspberry, cassis, and a warm undertone of mushrooms sauteed in butter. A wonderful mix of inviting flavors, including huckleberry pie, spice cake and toasty oak, expand on the palate and couple with a bright acidity that propels this wine to a delicious energetic finish inviting another sip. This structured Cabernet deserves food with bold assertive flavors. Our favorite pairings are grilled T-bone steak, barbeque bone-in pork or grilled lamb chops with rosemary. Drink now through 2033.
