Wine Review: This brilliant straw-colored Sauvignon Blanc from Knights Bridge opens with a mild grapefruit, passion fruit and honeydew melon bouquet. On the palate, this wine is medium bodied, balanced and has a soft and round pleasant mouthfeel. The flavor profile is a green apple and mild gooseberry blend with notes of green pea. I also detected hints of honey, faint yellow grapefruit, lemongrass, saline and touch of new oak. The finish is dry and fades away nicely. This Sauvignon Blanc would pair well with oysters. Winemaker Notes: Made from a single selection of Musque clone, this wine is a reflection of our Knights Bridge vineyard and its distinct terroir. Crisp flavors of lemon, chamomile tea, and honeycomb are all supported by a vibrant minerality toward the finish. Old vines contribute to weight and texture, making this an especially full and caressing Sauvignon Blanc. The richness and fine texture of this wine pair well with sushi or denser fish like yellowtail, trout or haddock. It is a superb accompaniment to saffron risotto with scallops and adds a fine refreshing quality to a host of vegetable-based Asian cuisines like Thai curry.
