Wine Review: This dark ruby colored Cabernet Sauvignon from Walla Walla opens with a black cherry and graphite bouquet with notes of black currant. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is juicy and bright. The flavor profile is a crushed stone and blackberry blend with notes of black tea and oak. I also detected hints of black raspberry, black licorice, and a dash of black pepper. The finish is rather dry, and its dusty tannins linger and last for a very long time. This Cab will benefit from some aeration. I would decant it and pair it with a rib roast. Enjoy – Ken
