Wine Review: This pale straw-colored Pecorino from La Valentina opens with a shy bouquet of lime, grilled pineapple, and white florals. On the palate, this wine is medium bodied, balanced and round. The flavor profile is a pleasant mild green apple with notes of chalky minerality, lime, jasmine and honeysuckle. It's a real quaffer. The finish is dry and it fades away nicely. The Panel would pair this versatile Pecorino with linguini with clam sauce, a seafood casserole or tarragon chicken salad. Enjoy - Ken
