Wine Review: This deep purple colored Cabernet Sauvignon from McPrice Myers open with a fragrant ripe black currant and blackberry bouquet with hints of black cherry, chocolate, and graphite. On the palate, this wine is medium bodied with bright acidity that was nicely integrated. The mouthfeel is nicely balanced, silky smooth and suave. The flavor profile is a black plum, blackberry, and loam blend with notes of graphite and black tea. We also detected hints of black jellybean, cocoa powder, and dried herbs. The finish is dry, and its tannins and flavors fade away nicely. We would pair this versatile and food friendly Cab with a slow cooked and tender beef stew or with a meat-lovers pizza. Winemaker Notes: Today my biggest challenge, and "Bull" so to speak, is Cabernet Sauvignon. I love crafting balanced, textured, decadent Cabernets. But the real challenge is: How do you make great Cabernet for an affordable price? My answer is …Bull by the Horns. Our 2021 is sugar dusted black currant and cherry, birch beer, espresso, chocolate mint, black licorice, maple candy. Classic, authentic Cabernet structure, true to varietal, fine tannins that stretch to a long, refined, and graceful finish.
