Wine Review: This dark red colored Cabernet Franc from Merriam opens with a mild red raspberry and red currant bouquet with hints of pencil shavings and black plum. On the palate, this wine is medium bodied with integrated medium acidity. The mouthfeel is nicely balanced, round, delicate, and approachable. The flavor profile is gentle and juicy plum and mild cedar blend with notes of cinnamon tea. We also detected hints of stone dust, mild red licorice, and baking spices. The finish is dry, and its flavors, acidity, and well-managed refined tannins drift away nicely. We would pair this food friendly Cab Franc with veal marsala medallions or a grilled veal chop.
