Wine Review: This Cab from Merryvale is a sleeper in the high end range. It brings similar quality when compared to many of the other High End Cabs at a lower price tag. It is opaque and very dark purple. Some would describe it a black. It opens with a fragrant black currant bouquet with a hint of black cherry and oak. On the palate, this wine is medium to full bodied, balanced, and shows plenty of upfront ripe fruit. The flavor profile is a tasty ripe blackberry and black currant blend. There are also gentle notes of oak, pepper, and blueberry. The finish is dry and its moderate tannins show some grip and linger for a while. This wine would pair well with veal parmigianna. Winemaker Notes: Our 2007 Napa Cabernet is very dark red in color with aromas of currents, black cherry, violets, and cedar along with vanilla and toasty oak. The mouthfeel is generous with fine tannins and a long finish. Typical of the 2007 vintage, this cabernet will drink very well in its youth, but will age gracefully for the next 10 years and beyond. We recommend pairing this wine with a seared NY strip steak.
