Wine Review: This opaque and very dark ruby colored Cabernet Sauvignon from Mount Peak opens with a blackberry and black cherry bouquet. On the palate, this wine is full bodied, slightly acidic and juicy. The flavor profile is a concentrated ripe blackberry with notes of mineralogy and black olive. I also detected hints of black cherry, black tea, and black licorice. The finish is dry and its flavors and moderate tannins show nice length. I would pair this Cab with a New York strip steak. Winemaker Notes: Our Sentinel Cabernet Sauvignon is named for the shield-shaped block that casts a watchful eye on the entrance to Monte Rosso Vineyard. Dense dark fruit notes abound in this robust Cabernet Sauvignon, with ripe blackberry, cassis and wild blueberries leading the charge. Pronounced earth tones follow suit, along with a Mayan chocolate spiciness on the firm, lasting finish.
