Wine Review: Retrospective Tasting: This midnight purple colored Cabernet Sauvignon from Robert Foley opens with a black currant and black cherry bouquet with hints of bacon, chocolate, and menthol. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is well-balanced, silky, opulent, and bright. The flavor profile is black plum and graphite blend with notes of cassis and oak. We also detected some hints of Blueberry and dark cherry in the mix. The finish is dry and its dusty tannins build-up and last for a very long time. The Tasting Panel would pair this Cab with Chris’s prime rib roast or just sip it on its own. Enjoy – KWGTP

Original Review 1/12/23: This cloudy deep purple colored Cabernet Sauvignon from Napa Valley is Excellent! It opens with a cassis and dark chocolate bouquet with hints of blueberry, black raspberry, vanilla, and shoe leather. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is well-balanced, round, fresh, and bright. The flavor profile is delicious blend of black plum, cassis, stony minerality, cocoa and oak with notes of black raspberry. The finish is dry and its dusty tannins build-up and last for a very long time. The Tasting Panel would pair this Cab with Roy’s rib roast with Yorkshire pudding or a grilled hanger steak.
