Wine Review: This dark garnet colored Cabernet opens with fragrant boysenberry and oak influenced bouquet with a hint of black cherry. On the palate, this wine is medium bodied, balanced, and juicy. The flavor profile is a pleasant black currant with hints of oak and strawberry licorice in the background. The finish is dry and its mild tannins are slightly prolonged. This wine would pair well with center cut pork chops with a cherry Cabernet glaze. Enjoy - Ken
Winemaker Notes: After the grapes were gently hand -harvested, de-stemmed and crushed, the juice fermented in temperature -controlled stainless steel tanks, with an extended post - fermentation maceration that beautifully married flavors and tannins, giving our Oberon Cabernet Sauvignon its lovely, seamless texture. Malolactic fermentation in barrel, combined with 12 months oak aging (45% new French oak), further concentrated the wine’s vibrant red cherry, candied blackberry, and spice flavors, adding a hint of coffee and a lingering dark chocolate note on the finish.
