Wine Review: This medium purple colored Zinfandel from Once & Future opens with a strawberry and raspberry bouquet with hints of Asian five spice, dried flowers, and spearmint. On the palate, this wine medium bodied with medium acidity. The mouthfeel is balanced and a little rustic, but with no edges. The flavor profile is savory mix of crushed stone and black plum with notes of dried herbs, chocolate, blackberry, and black pepper. We also pick up some hints of cola and clove towards the very end. The finish is dry and its dusty tannins drift away nicely. The Tasting Panel would decant this wine in the near term as it benefits from some aeration. Then we suggest pairing it with a grilled bratwurst with onions and red peppers or with a charcuterie platter. Enjoy - KWGTP
