Wine Review: This dark red colored Zinfandel from Once & Future opens with a faint blackberry and black cherry bouquet with hints of cola, wet clay, and iris. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is balanced, round, rich, and bright. The flavor profile is a graphite and black cherry blend with notes of Australian soft black licorice and black pepper. We also detected hints of pomegranate, thyme, cola, and cedar. The finish is rather dry, and its flavors, acidity, and well-managed dusty tannins are very nicely sustained. We would pair this powerful Zin with a steak Au poivre or with slow cooked beef brisket.
