Wine Review: This opaque and deep purple colored Cabernet Sauvignon opens with a wet stone, moist pipe tobacco and black currant bouquet with hints of mint, oak and violets. On the palate, this wine is full bodied with nicely integrated medium acidity. The mouthfeel is extremely very well-balanced, smooth, and silky. The flavor profile is a black currant, black cherry, and crushed stone blend with notes cocoa and blueberry. We also detected hints of wintermint, and cola. The finish is dry, and its moderate integrated dusty tannins are very nicely sustained. The Panel would enjoy the Excellent Cab as a sipper. With food we would pair it with a porterhouse steak. Winemaker Notes: This wine definitely qualifies as the most elegant PATRIMONY Cabernet to date. The nose is layered and complex, exploding with chocolate, cooked blackberries, violets, cedar, and cigar box. On the palate, crushed stones give it a dimension rarely seen in a new world wine. The fruit is pure and potent yet very fine while being accompanied with a kaleidoscope of flavor ranging from blueberries, blackberries, dulce de leche and a touch of rose petal while having a very mineral and floral note. This wine will show its potential after it ages in the bottle for several years. It will age and improve for decades.
