Wine Review: This opaque and midnight purple colored Cabernet Sauvignon from Paul Hobbs opens with a classic cassis and graphite bouquet with hints of blackberry jam. On the palate, this wine is medium bodied, nicely balanced, smooth and velvety. The flavor profile is a tasty black plum and menthol blend with notes of blackberry, black tea and oak. We also detected hints of nutmeg, black licorice, and black cherry mixed in. The finish is dry and moderate refined tannins drift away nicely. The Panel would pair this Cab with porterhouse steak. Winemaker Notes: Presenting deep garnet in the glass, the 2017 vintage is a blend composed of pedigreed sites and displays aromas of dried lavender, cocoa powder, and wild blueberry. A core of black fruit is wrapped around holiday spice and crushed rock that adds depth and complexity. Polished tannins and fresh acidity frame the palate which finishes long and with an herbal lift of sage.
