Wine Review: This pitch-black colored Cabernet Sauvignon from Paul Hobbs opens with a boysenberry pie and toasted coconut bouquet with hints of chocolate cake, rose pedal, and graphite. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is well-balanced, very smooth, and dense. The flavor profile is a chocolate and toasted coconut blend with notes boysenberry, cedar, and almond. We also detected hints of blackberry and cherry. The finish is dry, and its dusty tannins are nicely sustained. The Tasting Panel would pair this Cab with steak tartare or with a char-grilled butterflied leg of lamb. Enjoy – KWGTP
