Wine Review: This deep purple colored Syrah from Pax is excellent! It opens with a red cherry and menthol bouquet with hints of mulberry, violets, and spiced black plum jam. On the palate, this wine is medium bodied with integrated medium plus acidity. The mouthfeel is balanced, smooth, fresh, and clean. The flavor profile is mulberry and dusty stony minerality with notes of cedar and strawberry. We also detected hints of saline, thyme, black pepper, and cured meat at the very end. The finish is dry, and its flavors, acidity, and moderate fine tannins linger and last for a while. The Tasting Panel would pair this complex Syrah with a grilled butterfly leg of lamb.
