Wine Review: This medium white gold colored Chardonnay from Pax is excellent! It opens with a green apple and green melon bouquet with hints of light oak, pear, and white florals. On the palate, this wine is medium plus bodied with medium plus acidity. The mouthfeel is nicely balanced, creamy, and mouthwatering. The flavor profile is a tasty mild caramel green apple and poached pear blend with notes of honey, almond and mild oak. We also detected some hints of vanilla and ginger. The finish is dry, and its flavors and acidity linger and last for quite a while. The Tasting Panel would pair this versatile and food friendly Chard with chicken and wild mushroom ravioli with a light crem sauce and with chicken francese. Enjoy – KWGTP
