Wine Review: This slightly cloudy and very dark ruby colored Syrah from Pax opens with an Australian black licorice, spearmint, and mild rubber bouquet with hints of black plum and dark chocolate. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is balanced, round, bright, and juicy. The flavor profile is cedar and tart cherry blend with notes of tobacco, black tea, and red licorice. We also detected hints of cured meat and pomegranate. The finish is dry, and its flavors, acidity, and mild tannins fade away nicely. This Syrah is young and will benefit from extended aeration.
