Wine Review: This clear and glimmering light-yellow colored Chenin Blanc from Pax opens with a poached pear and key lime bouquet with hints of quince, light honey, pineapple, and lemon sorbet. On the palate, this wine is medium bodied with plus acidity. The mouthfeel is smooth, fresh, and mouthwatering. The flavor profile is a lemon verbena and ginger tea blend with notes of lime zest. We also detected hints of white peach and quince. The finish is dry, and its flavors and acidity linger and last for quite a while.
